Gerard’s Stuffed Mushrooms

Serves 2

Ingredients:

4 x large field mushrooms

6 rashers bacon

2 small red chillis

2 cloves garlic

1 onion

philadelphia cheese

grated tasty cheese

olive oil

salt and pepper to taste

 

Method:

1. Heat oven to 100 degrees

2. Peel mushroom skin & remove stalk. Place on a flat baking tray & place in the oven for approximately 20 minutes or until soft

3. Dice all ingredients (chilli, onion, garlic, bacon). Once diced, heat a large fry pan with a little olive oil & cook on medium high heat until browned. Add salt & pepper to taste

4. Once ingredients are browned, remove mushrooms from oven & evenly distribute ingredients into all four mushrooms

5. Place thin slices of philadelphia cheese on top of mushrooms, followed by a sprinkling of grated tasty cheese

6. Return mushrooms to oven & cook until cheese is melted (griller can be used in last 5 minutes to brown cheese)

7. Serve immediately
