Kylie’s Steam Baked Mushroom Salmon

Serves 2
Ingredients:
150-200g mixed exotic mushrooms
2 bunches Bok Choy – cut into 5cm pieces
2 x 150-200g Salmon Fillets – de-skinned and de-boned
1 knob garlic – sliced
1 x 2cm piece ginger – julienne
1 x large bunch Coriander – roughly chopped
1 x bunch Shallots – roughly chopped
1 x large red chilli – roughly chopped
2 x sticks lemon grass – cut into thin slices
2 tbsp Soy Sauce
2 tbsp Sesame Oil
1 tbsp Fish Sauce
Method:
1. Pre-heat oven to 180 degrees
2. Tear 4 x 30cm pieces of alfoil and lay on top of each other in a cross formation
3. Place even amounts of Bok Choy on each piece of alfoil
4. Place even amount of mushrooms on each stack of Bok Choy, reserving some for last
5. Place 1 piece of salmon on each stack
6. Place remaining mushrooms on top of salmon
7. Mix garlic, ginger, chilli, lemon grass, coriander, shallots, soy sauce, sesame oil and fish sauce in a small bowl. Stir to combine. Once combined, place equal amounts on top of each piece of salmon.
8. Fold alfoil around salmon parcel, place on baking tray and place in oven. Cook for approximately 30 mins.
9. When cooked, simply place alfoil on plate and open to eat. Serve with rice
