Nigel’s Prawn and Mushroom Curry
Serves 2
Ingredients:
20 large uncooked prawns
250g mixed exotic mushrooms
1 x tin green curry paste
salt and pepper to taste
olive oil
1 x cup rice
Method:
- Peel and wash prawns and put aside
- Slice mushrooms and put aside
- Heat a little oil in a fry pan on medium to high heat and cook prawns. Once cooked through, remove and set aside in a bowl
- Heat a little oil and butter in a fry pan and cook mushrooms until soft.
- Once mushrooms are cooked, place cooked prawns back in fry pan and add curry paste and salt and pepper to taste.
- Stir continuously for 10 minutes on low heat (simmering).
- Remove from heat, and serve with cooked rice.
