Nigel’s Prawn and Mushroom Curry

Serves 2

Ingredients:

20 large uncooked prawns

250g mixed exotic mushrooms

1 x tin green curry paste

salt and pepper to taste

olive oil

1 x cup rice

 

Method:

  1. Peel and wash prawns and put aside
  2. Slice mushrooms and put aside
  3. Heat a little oil in a fry pan on medium to high heat and cook prawns. Once cooked through, remove and set aside in a bowl
  4. Heat a little oil and butter in a fry pan and cook mushrooms until soft.
  5. Once mushrooms are cooked, place cooked prawns back in fry pan and add curry paste and salt and pepper to taste.
  6. Stir continuously for 10 minutes on low heat (simmering).
  7. Remove from heat, and serve with cooked rice.
